Claudio Aprile: Returning to his Origin
The renowned chef's new Bar Origin on Elizabeth Street in Burlington resurrects signature dishes from Toronto’s celebrated Origin, which closed in 2017.
The spring 2025 issue of HAMILTON CITY Magazine shared celebrated chef Claudio Aprile’s food journey, which had moved him west from Toronto. His role as culinary director for two Italian eateries left him room to ponder resurrecting his own Toronto restaurant Origin (closed 2017), which earned accolades for its European/Asian tapas. Mission accomplished. Bar Origin opened in June at 399 Elizabeth St. in Burlington.
"I wanted the new iteration to be a reflection of my travels, my experiences, and the people who have inspired me throughout my career,” Aprile said in a press release. “Revisiting the original Origin dishes for the new Bar Origin menu has allowed me to refine them in ways I couldn't have years ago.”
Bar Origin’s menu balances new creations with some of Origin’s signature dishes. Shareable tostones and duck tacos, the beet salad, the Origin burger, and the hot and cold ice cream sandwich will beckon fans to return. There is no doubt they will welcome the snack/appetizer choices, which include melon and Serrano ham, beef tartare, burrata, and crispy calamari, which is perfection on a plate.

While the menu may change seasonally and as the eatery evolves, mains when I visited included pasta, chicken, seafood, the burger, and several steak options. The halibut showcased Aprile’s skill in flavour combinations. Topped with tomato chutney and served on peas, the table-side pour-over of a sauce of brown butter and soy resulted in unforgettable eye candy and taste. The perfectly prepared crispy calamari was cleverly paired with caramelized peanut sauce and grapefruit. Desserts are designed to be a light finish to a superb meal and include international flavours and a daily special.
Patrons enter Bar Origin's renovated space via a bar that showcases a thoughtfully designed drinks menu. The curated list of local and international wines pairs well with Aprile's globally inspired cuisine. Creative cocktails complement meals or can be enjoyed in a lounge (open until 2 a.m.) created for conversation. The restaurant flows through several spaces, some that accommodate small groups. There is a seasonal patio and spaces to host private events.
